Gestão de compras no setor hoteleiro

Abstract

O presente relatório tem como suporte o estágio curricular realizado no último ano de Mestrado em Gestão da Universidade Portucalense Infante D. Henrique. O estágio teve início no dia 6 de Outubro de 2021 e terminou a 6 de Abril de 2022, sendo realizado no departamento financeiro do InterContinental Porto, Palácio das Cardosas, localizado no Porto. Este hotel tem como um dos seus objetivos proporcionar serviços de luxo a todos os seus clientes. No decorrer deste relatório são abordadas temáticas como a gestão de compras, custos e stocks em hotelaria. É importante reiterar ainda certos aspetos como o uso da curva ABC, do Just-in-Time e da gestão da cadeia de abastecimento. É também dada a entender a realidade hoteleira em Portugal, no que diz respeito às dormidas e o impacto que o “fenómeno” COVID-19, onde se pode constatar um decréscimo das mesmas. O objetivo do presente relatório é transmitir todo o conhecimento sobre o funcionamento do departamento financeiro com especial destaque para a área de gestão de compras. Ao longo do relatório é dado a perceber as funções realizadas no estágio de uma forma mais detalhes através de exemplos explicativos das mesmas. This report is supported by the curricular internship carried out in the last year of the Master's in Management at Universidade Portucalense Infante D. Henrique. The internship started on October 6, 2021, and ended on April 6, 2022, taking place in the financial department of the InterContinental Porto, Palácio das Cardosas, located in Oporto. One of the goals of this hotel is to provide luxury services to all its customers. Throughout this report, topics such as management of purchases, costs and stocks in hospitality are addressed. It is also important to reiterate certain aspects such as the use of the ABC curve, Just in Time and supply chain management. It is also given to understand the hotel reality in Portugal, regarding overnight stays and the impact that the “phenomenon” COVID-19, where it can be seen a decrease in the overnight stays. The objective of this report is to transmit all the knowledge about the functioning of the financial department, with special emphasis on the purchasing management area. Throughout the report it is given to understand the functions performed in the internship in a more detailed way through explanatory examples of the same.
